Considering the Ancient Armes Kingdom is actually older than any known Sindarin ruins and that their descendants are still human, it would be safe to assume that if the Sindar haven't found out a technological way to change their physical form, they're still human.
Remember, we might be technologically advanced compared to people in the middle ages, but take away our iPods and put us in era-pertinent clothing and we look like any person in the Middle Ages.
